Healthy Mango Cupcakes Recipe

Ingredients:

Cupcake

  • 4 eggs
  • 1/3 cup coconut nectar
  • 1/2 tbsp apple cider vinegar
  • 1 tbsp vanilla extract
  • 1/4 cup coconut or nut milk
  • 1/3 cup coconut oil
  • 1 cup of fresh mango purée
  • 3/4 cup banana flour
  • 1 tbsp baking powder
  • Pinch of Himalayan sea salt

Icing

  • 4 fresh pitted dates
  • 1 ripe avocado
  • 1 cup mango purée
  • 1 tsp vanilla extract
  • 1/3 cup raw cacao powder
How to make the cupcake:

    Preheat the oven to 180°C.

    Blend all ingredients together until smooth.

    Pour the mixture into cupcake cups.

    Put it in the oven for 30 minutes.

    Let it cool completely before adding the icing.
How to make the icing:

    Combine all the ingredients in a blender for 30 seconds until smooth and creamy
  2. 2
    Allow to set in fridge when you make the cupcakes.
